NOM of the week...



(don't fall out of your chair...) Yes. I MADE this yummy Waldorf Chicken Salad!

Okay. You can get up now. I know I usually don't cook or make my own food, but I really really wanted to eat this salad and it seemed silly to hunt around the city to find some ready-made stuff. Luckily, it was super easy to make:

Cute Waldorf Chicken Salad

1 organic Fuji apple
2 stalks organic celery hearts
1 c. seedless red grapes (out of season, I know...but I really could not help myself!)
1/2 c. raw walnuts
1 tsp. butter
1 tsp. sugar
1 large can of chicken chunks (or leftover chicken if you have it)
3/4 c. mayonnaise (more or less...can substitute plain yogurt if you want)
1 small lemon
Gorgonzola cheese crumbles

Seasoning to taste:
Salt
Fresh cracked pepper
1/2 tsp. Onion powder
1/2 tsp. Garlic powder

Crush walnuts into small pieces. Heat small skillet on high and melt butter and sugar. Very quickly toss in walnuts to toast and coat with a slight candied coating. Be careful not to burn this mixture. Transfer to a plate to cool while you prep the rest of the ingredients:

Cut up apple into small chunks.
Cut up celery stalks into 1/2" slices.
Wash and de-stem grapes.
Open chicken and drain.

Add chicken to a large bowl and break up into small pieces with a wooden spoon.
Add apple, celery, grapes and walnuts.
Squeeze in 1/2 of a small lemon and add mayonnaise. Stir to coat all ingredients.
Sprinkle in a pinch of salt and as much pepper as you like (I like a lot of pepper).
Add about 1/2 tsp. each of onion powder and garlic powder (more or less to taste).
Stir all ingredients to evenly distribute mayo and spices.
Top with a handful of Gorgonzola cheese crumbles (yum!)

Good to eat right away (like I could wait!) but honestly, it's even better if you're able to let it chill for a couple of hours in the fridge.
